After you have finished preparing the plums, leave them in a sieve or in a bowl and sterilize the jars.

Wash the jars and lids thoroughly with warm water and detergent, then rinse.

Sterilize the jars and lids by boiling or in the oven. To boil, place the jars in a large pot of water and boil for 10 minutes. In the oven, place the jars on the rack and leave them at 100°C for 15 minutes.

How to can plums without sugar

Place the plums in the jars, leaving a little space at the mouth of the jar (about 1-2 cm).

If you wish, you can add a piece of cinnamon, a clove or a vanilla pod to each jar for extra flavor.

Pour boiling water over the plums, making sure that they are completely covered. Close the jars tightly with the sterilized lids.

Place the jars in a large pot with a towel or rack at the base to prevent direct contact with the bottom of the pot. Fill the pot with water up to the neck of the jars and bring the water to the boil.

Boil the jars for 20-30 minutes to ensure that the fruit is properly sterilized.

After turning off the heat, let the jars cool slowly in the water in the pot. After they have cooled completely, check that the lids are sealed properly. The lids should not move or make a popping sound when pressed.

Store the jars in a cool, dark place. Plums preserved in this way can be kept for the winter and used in various recipes or as such.
