This summer you really must try this easy to make, delicious tasting blueberry cheesecake dessert that you won’t get tired of.
A blueberry cheesecake is the perfect choice to sweeten up our summer days, especially as it’s easy to make and tastes absolutely incredible!
Ingredients – Blueberry cheesecake
- 400 g milk biscuits, Petite Beurre type
- 150 g butter with 85% fat content
- 300 g cow’s cheese
- 500 ml cream for whipping
- 200 g powdered sugar
- 200 ml water
- 100 ml full fat milk
- 40 g gelatin
- 24 g vanilla sugar
- 300 gr blueberries
- 4 tablespoons brown sugar
Preparation – Blueberry cheesecake
Crumble the biscuits finely using a food processor, then add the melted butter. Place the mixture in a round mold with removable walls and press with a glass to make the layer as straight as possible. Refrigerate for half an hour.
Put 20 grams of gelatin in 100 ml of cold water and leave for 10 minutes to set and swell. Put the cheese, icing sugar and vanilla sugar in a large bowl and mix well, then add the whipping cream. Add the swollen gelatin to the lukewarm milk and then add it to the cream cheese mixture.
Put the blueberries and sugar in a saucepan and simmer over a low heat until it comes to the boil. Add the rest of the swollen gelatin, proceeding exactly as above.
Add the cream cheese over the biscuit layer, then the blueberry jelly. Refrigerate for at least 5 hours.
