Sour kefir goes very well with crepe batter.

If you’re used to mixing kefir into your cookie dough, you probably won’t be surprised that it also goes very well in pancakes. Kefir, which has a taste similar to yogurt, but with more character, results in a thick dough, so the resulting crepes will be slightly thicker than usual.

Kefir crepes

Ingredients for 4 servings

  • 200 g flour
  • 75 g sugar
  • 2 eggs
  • 20 g melted butter
  • 150 ml of water
  • 1 small cup of kefir
  • 1 teaspoon vanilla flavoring
  • 1 pinch of salt
  • 1 pinch of baking soda
  • Oil for frying

Preparation

Mix the eggs with the sugar until foamy. Add the vanilla flavoring, kefir and water and mix well. Sift in the flour, add the baking soda and a pinch of salt, stir, and finally add the melted butter. Fry the crepes individually in an oiled pan as usual.

The resulting crepes will be thicker than usual, so two per person will be enough. Serve with fillings of your choice.
