Homemade French croissants that melt in your mouth

Croissant is a very popular pastry. If you buy them from shops regularly, try to bake some at home according to the recipe below. You will be surprised how much more fragrant and appetizing they will turn out compared to the shop-based ones.

Due to the huge popularity of the French croissant, various methods have been applied over tine to shorten the manufacturing process. This is why croissants prepared in food industry shouldn’t even be mentioned on the same page than the ones made from natural ingredients in your own kitchen.

Ingredients for the pastry

  • 250 ml milk
  • 450 g flour
  • 20 g yeast
  • A dash of salt
  • 3 tablespoons powdered sugar
  • 3-4 tablespoons melted butter
  • 150 g butter for stretching

Ingredients for the cream

  • 500 ml milk
  • 1 vanilla pod
  • 3 eggs
  • A dash of salt
  • 50 g butter
  • 8 tablespoons sugar
  • 4 tablespoons flour

Preparation

Sift the flour. Mix the yeast with milk, and add the flour, melted butter, salt and sugar. Mix the ingredients well and knead a dough.

Stretch the dough into a rectangular shape. Place the soft butter in the middle. Fold up the dough several times and refrigerate.

Repeat the kneading and wrapping 2-3 times, and refrigerate the dough after each kneading.

In the meantime, prepare the cream. Boil up the milk with the vanilla pod. Rub the sugar with the eggs and a pinch of salt, and mix in the sifted flour and the hot milk. Thicken the cream over moderate heat, stirring continuously. When the cream is ready, set aside and add the butter.

Spread the dough, cut into strips and fill with the cooled cream. Roll the strips into mini-croissants. Coat with egg and bake until golden brown.
