In the summer heat, we instinctively avoid heavy, rich, fatty foods and lengthy cooking so we don’t make an already overheated home even hotter.
Fresh, juicy garden tomatoes can quickly be turned into a delicious and nutritious soup that can be enjoyed hot or cold.
Tomato soup – Ingredients
- 1 kg ripe garden tomatoes
- 1 clove of garlic
- 1 tablespoon olive oil
- 2 liters of water
- 1 green pepper
- 2 onions
- 1 tablespoon fresh or dried herb mix (basil, lovage, oregano);
- 100 g homemade noodles
- Salt and pepper
Tomato soup – Preparation
Boil up 1.5 liters of water. When it starts boiling, add 1 teaspoon of salt and mix well. Place the washed tomatoes in the boiling water for 2-3 minutes and then remove them into a bowl.
Leave to cool until you can handle them, then peel and cut into small cubes.
The secret: onions and garlic
Pour a few drops of hot oil into a pan, and add the chopped onion and garlic. Sauté for a while for the oil to take on the flavor, then add a little water and simmer until the onion and garlic are completely softened. Add the diced peppers and tomatoes and cook for a few more minutes. Add boiling water and simmer for another 15 minutes.
Season with salt and pepper to taste and finally add the herbs for the perfect flavor. In the last 5 minutes, add the homemade noodles, stirring to avoid lumps.
