While the garden tomatoes are ripening, it’s time to look for canned tomato recipes for the winter.
The following recipe is for a flavorful sauce with garlic and thyme, which can be included in various dishes.

Ingredients
- 3 kg ripe tomatoes
- 30 g pickling salt, iodine-free
- 1 onion
- 3 cloves garlic
- 3 teaspoons thyme, dried and ground
- 1/2 tsp ground pepper
- 1 tablespoon sunflower oil
- 1 chili pepper, optional
Preparation
First wash the tomatoes well, dry and chop into cubes. Leave them in a bowl until you prepare the other ingredients.
Clean the onion and garlic and chop finely.
Heat a frying pan with the oil and sauté the onion and garlic, stirring constantly to avoid burning. Sauté just until they are lightly browned.
Pass the tomatoes through a seed separator and transfer the tomato juice in a saucepan, together with the onion and garlic, which have been sautéed in the oil.
Heat the pan over medium heat to start, and when the tomato sauce starts to boil add the salt, thyme and pepper. Reduce the heat to low and cook the tomato sauce for 40-45 minutes, until thickened.
For extra flavor and consistency, add some more chopped onion and garlic to the sauce.
For an extra spicy taste, you can also add a ground or finely chopped chili pepper.
Sterilize some bottles or jars and distribute the hot sauce into them. Wrap them with a blanket and leave them to cool slowly, which will ensure safe storage.
Label the jars and bottles and transfer them in the pantry.
