Elderberry is a 4-5-meter-tall shrub that grows from the lowlands to the lower mountains, especially along forest edges and roadsides.
For medicinal purposes, elderberries are harvested for their flowers and fruit, which are black, sweet-and-sour, with a flavor reminiscent of blueberries. Preparations with elderflower have sudorific, diuretic, emollient, anti-rheumatic and anti-neuralgic effects, and they also stimulate the body’s resistance to pathogens.
Yellowish white, deliciously fragrant, and pollen-laden elderflowers bloom on the otherwise inconspicuous bushes in May and June.
Elderflowers can be used to make elderflower drink, a delicious, refreshing preparation (it can be made even out of season from dried elderflowers, stored in paper bags in a cool place).
Elderflower drink recipe
Ingredients for 5 liters
- 10 elderflowers
- 500 grams of brown sugar
- one large lemon
- 8 grams of fresh yeast
Wash the elderflowers and place them at the bottom of a jar. Sprinkle with sugar, then add the juice of the lemon and the sliced peels. Add enough water to cover the contents of the jar and set aside until the next day.
The next day, fill the jar completely with cold water, stir, add the yeast, cover the jar, and leave in a warm, sunny place for 2-3 days.
Each day, stir the contents of the jar in the morning and evening and taste the drink. When it has reached the desired acidity, strain, transfer into bottles and place the bottles into the refrigerator. Always serve cold.
