Greek chicken soup is a hearty dish, thickened with rice, cream, egg and lemon juice, and sprinkled generously with dill and parsley. It’s so nourishing that you may not even feel the need to serve a main course at dinner.

Ingredients

  • 1 kg chicken, larger pieces
  • 1 onion
  • 1 carrot
  • 1 parsley root
  • 1 parsnip root
  • salt and pepper
  • 1 bay leaf
  • 100 g rice
  • 2 medium egg yolks
  • Juice of 2 lemons
  • 200 g sour cream
  • 1/2 bunch green parsley
  • 1/2 bunch green dill

Preparation

Heat up a 3-liter pot of water over medium heat. When the water begins to boil, add the chicken pieces and a teaspoon of salt. Let the chicken simmer until it starts to fall off the bones. Occasionally skim off the foam that forms on top.

Transfer the chicken pieces to another pot, let it cool, then remove the meat from the bones and cut into smaller pieces. Add the cleaned and diced vegetables to the soup. Add a bay leaf, but don’t forget to remove it after 10-12 minutes, otherwise the soup will become bitter. Simmer over low to medium heat, covered with a lid.

When the vegetables are lightly cooked, add rice rinsed in cold water beforehand. Also, add the boneless, chopped chicken. Let the soup simmer for 7-8 minutes, while you prepare the dressing.

How to prepare the soup dressing

Mix the 2 egg yolks with the lemon juice and cream. While stirring, gradually dilute with hot soup. Add only a small amount of soup at a time and stir intensely until the soup reaches the temperature of the soup in the pot.

Now pour the dressing into the soup in a thin stream, stirring vigorously with a spatula to homogenize. Allow the chicken soup to simmer for 6-8 minutes more. In the meantime, taste the soup and season with salt and pepper. Before turning off the heat, add the chopped dill, which needs 2-3 minutes to cook to release its flavor. When the heat is off, add the finely chopped green parsley. The flavor of parsley is released immediately, so it does not need to be cooked.
