Fragrant, heavenly lemon and strawberry jam: a beginner’s recipe

For many, the start of strawberry season means canning. The first fragrant red delicacy of the year can be made into fantastic syrups and jams, which are great to sip on cold days.

Homemade strawberry jam is a classic, and it’s easy to make. The advantages of the home-made version include the fact that you know what goes in the jar, you can enrich the jam with extra flavorings and you can play with the texture. You can also make a chunky version if you like, by adding the strawberries whole. Homemade jam will keep in the pantry for up to 5-6 months.

Ingredients for 800 grams of jam

  • 1 kg strawberries
  • The juice of 2 lemons
  • 800 g sugar

Clean the strawberries thoroughly.

In a large saucepan, heat the lemon juice and sugar over a low heat. When the sugar is completely melted, add the strawberries and cook over a low heat for 25-30 minutes. Then turn the heat up to high and bring to the boil for 5-8 minutes. Remove 1 tablespoon of the jam to a cold plate and check the consistency after 2-3 minutes; if the jam is not runny, it is ready, if not, cook some more.

Skim the foam (if any) off the top of the jam, then distribute into clean jars and seal.

Turn the filled jars upside down and wait for them to cool completely.
