Strawberries are delicious and they can be enjoyed by themselves, but you can also make strawberry compote with a squeeze of lemon.
If you like strawberries and want to enjoy their full flavor, make a compote. The recipe is ready in half an hour, and it makes a perfect dessert. It’s heavenly on its own, but you can also serve it with Greek yoghurt, sour cream, vanilla ice cream or even spoon it on top of pancakes or waffles.
You shouldn’t pour too much water over the strawberries, as they release a lot of liquid during cooking, so they essentially soften in their own juice. Add sugar depending on the sweetness of the strawberries, or you can omit it completely. You should also add several drops of lemon for a more refreshing taste. If you add some grated lemon peels, the pectin they contain will thicken the juice.
Ingredients for 4 servings
- 500 g strawberries
- 70 g sugar
- The peels of 1 organic lemon
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 150 ml water
Preparation
Remove the leaves from the strawberries, cut them in half.
Mix all ingredients in a pan. Start cooking; when bubbles begin to appear, reduce the heat. Cook for 10 minutes, stirring frequently, until the strawberries are soft.
Leave to cool for 10 minutes and serve.
You can store the leftovers in the fridge, covered, for up to 4 days.
